This wine was fermented in the bottle using the traditional method (méthode champenoise). This small lot wine was grown and produced with the finest attention to each and every detail. This has a beautiful burnished gold color. The nose pops with Meyer lemon, hibiscus flowers, fresh herbs, green apples and toasty aromas. The palate has gentle lees characteristics with dulce de leche, hazelnut, anise and lemon. There is finesse to the bubbles with a complex lingering finish.

King Estate Blanc de Noirs was made from grapes grown at King Estate and Laurel vineyards.

Winemaker Notes

Fermentation was by méthode champenoise (“champagne method”), meaning the wine undergoes a second fermentation in the bottle. The base wine was fermented till dryness, then tirage fermented in bottle. Aged en tirage sur lie for 26 months prior to riddling and disgorging, then finished with a liqueur d’expedition, an elixir of white wine that provides the sugar necessary to instigate the second fermentation.
