Here's the Rub!

Spice up your grilled meat, fish or poultry with spice rubs you can make at home. Here are four rub recipes from Executive Chef Stevie Provencio for your summer grilling pleasure. Simply mix the ingredients together and grind them in a small food processor or chopper.

House Spice Rub
Toast these spices at 350 degrees until aromatic, about 7 to 8 minutes, before blending together.
¼ cup fennel seeds
¼ cup coriander
¼ cup mustard seeds
¼ cup cumin seeds
¼ cup mixed peppercorns
4 bay leaves

Honey BBQ Rub
1/3 cup honey granules
4 T salt
1 T dark chili powder
2 tsp smoked paprika
1 tsp granulated onion
1 tsp granulated garlic
1 tsp black pepper
¼ cup dark brown sugar
½ tsp cayenne

Dalmatian Rub
½ cup coarse kosher salt
½ cup coarsely ground black peppercorns

Memphis BBQ Rub
1 cup turbinado sugar
½ cup light brown sugar
½ cup kosher salt
1 T onion powder
2 T granulated garlic
1 ½ tsp cayenne
1 tsp black pepper
2 tsp dry mustard
1 tsp ground cumin
1/3 cup paprika
¼ cup chipotle powder
